Agriculture & Winemaking

Organic certified since 2012.

Defining practices: Organic farming wit some BD practices, low yields, hand harvest in multiple tries, low yields and ambient yeasts for fermentation.
White wines are pressed in pneumatic press and fined with isinglass prior to bottling.
Red wines go through 20 days maceration after which they are pressed using hydraulic basket press. Usually – no SO2 until Spring after fermentation, no fining, and no filtering (gentle lenticular filtration in some vintages when its deemed necessary)
